Can't go wrong with a fresh sea bass ceviche. Easy and simple!!!

For this delicious recipe you will need:
.
1 lb sea bass, cleaned and diced
3/4 cups  lemon juice
Small onion finely chopped
Half a bell or sweet pepper finely chopped
1 minced garlic
2/3 cup ginger ale
Ready to use cilantro leaves
Salt and pepper

Preparation:
. 
In a medium large bowl mix all the ingredients and let it chill in the fridge for at least 4 hours, or until the fish appears fully cooked  with the lemon, rectify flavor and add  extra salt and pepper if needed.

Four cheese basil tortelloni, with coconut curry buttenut squash sauce and roasted garlic lime shrimp, crunchy pistachios and cheese bites

For the pasta I used:
500g wheat flour
3 eggs
Olive oil
Stir and place fliur into volcano type mound (a fontana) add the eggs and with the fork start slowly mixing it together, when the liquids are aborbed enough start kneading by hand, preoare for a good 20min gym session kneading your dough firmly till forming a soft yet manageable dough, rest for a few minutes and  use pasta machine to get your pasta sheet, cut into square shapes.
I made a cheddar cheese, cream cheese, parmeggian and mozzarella mixture and added some fresh basil cut in chiffonade. Add mixture into paata squares and shape as tortellonis.

For the sauce:
In a hot sauce pan add a splash of olive oil and 1 tbsp butter, add a chopped sweet onion and 3 garlic cloves, stir together, add diced butthernut squash and stir for a minute, then add 1 tsp curry powder, a pinch of nutmeg, pinch of tummeric, pinch of grounded ginger, 1tsp brown sugar, salt pepper, 2 bay leaves and add 2/3 cups vegetable broth. Cook for about 10min in medium heat until  squash is soft. Take it to the blender and add 1 cup of creamy coconut milk. Stir and rectify flavor.

For the shrimp, clean and pad dry, marinate with roasted garlic paste and flakes, salt, pepper and chilli powder. In a hot pan add a splash of oil, and cook in high heat, add 1 lemon juice and cook both sizes for about 3-4 min.

Bring water to boil add splash of olive oil and salt and cook the tortellonis
.
Plate all together and decorate with pistachios, cheese bites and cilantro leaves for extra flavors and textures.

Pasta making is a type of love making. After havin Pasta making is a type of love making. After having a great time playing with my kids pasta machine I went for it and got my old pasta machine out of the shadows. It is like riding a bike. A little rustier than before but if I keep using it ill be going as fast as the wind.

If there is anything motherhood has taught me is t If there is anything motherhood has taught me is that it comes in many different stages, I must admit that even though sometimes i miss the fat snuggly baby years, it also feel nice to grow out of it into new outcomes.
I dont have to wait for nap time anymore so I can spare some time to workout, now i just toss a bunch of building blocks, do my rutine and come out to new  creations, making this transition from babies to kids so much easier...
