A few years ago I fell in love with peppers. As a child, I was not particularly fond of them. I would remove them off my plate whenever I found them in my meals and it wasn't until I was a grown up that I decided never to restrict myself from any flavors, when I gave peppers a chance and my whole life changed.

After going through this culinary journey of self discovery, were I allowed myself trying ingredients such as peppers, I found myself  quite excited when I was invited to join my friend for dinner and her mother had prepared stuffed peppers. This particular peppers were cooked by removing the skin, then filling them with a ground beef and spices previously cooked filling. They were carefully wrapped in egg batter and grilled, and would finish by baking them for about 20 minutes at medium heat.  Absolutely recommended.

These peppers are a bit more festive, they take very little time and they are great october dinners!

 1 tbsp Pure Olive Oil
 5 pretty Bell Peppers

 ½ tsp Oregano Powder
 1 cup Diced tomatoes
 1 tbsp Worcestershire sauce
 2 Bay Leaves
 1 cup Cheddar cheese

In fry pan add a splash of olive oil, once it is hot add the chicken meat and even it around the pan, add the onions, celery, garlic and stir letting it cook for 7 minutes, mixing the ingredients all together.

2

Add salt, cumin, oregano and garlic powder, stir.

3

Add tomatoes, and cook on medium heat for about 20 minutes, stirring every now and then so it doesn't stick to the bottom of your pan.

4

In a cutting board and with a sharp paring knife cut the of your peppers, making triangle shapes so that when they come out they look like crowns.

5

Clean and deseed peppers, then carefully carve spooky faces on each one and stuff them with the chicken mix. Fill them up but make sure to leave a small space on your peppers so you can stuff with plenty of cheddar cheese.

6

Place the peppers in a tray and bake for 35 minutes at 370f.

Enjoy with fresh salad and breadsticks!
