In fry pan add a splash of olive oil, once it is hot add the chicken meat and even it around the pan, add the onions, celery, garlic and stir letting it cook for 7 minutes, mixing the ingredients all together.
Add salt, cumin, oregano and garlic powder, stir.
Add tomatoes, and cook on medium heat for about 20 minutes, stirring every now and then so it doesn't stick to the bottom of your pan.
In a cutting board and with a sharp paring knife cut the of your peppers, making triangle shapes so that when they come out they look like crowns.
Clean and deseed peppers, then carefully carve spooky faces on each one and stuff them with the chicken mix. Fill them up but make sure to leave a small space on your peppers so you can stuff with plenty of cheddar cheese.
Place the peppers in a tray and bake for 35 minutes at 370f.
Enjoy with fresh salad and breadsticks!
