Mushroom gruyere omelette!! . . For this recipe yo Mushroom gruyere omelette!! . . For this recipe you will need: - 3 eggs - 1 cup sliced white mushrooms - 2/3 cup of shredded gruyere cheese - 2 tbsp brunoise onion - 1 tsp brunoise garlic - Salt and pepper - 1 tbsp butter - splash of oil . . Directions: In a bowl whisk the eggs and add salt a pepper, safe for later. In a medium saucepan add the butter, onions, garlic and mushrooms. Saute stirring occasionally for a few minutes until the onion caramelizes and mushrooms are cooked (about 7 minutes) sprinkle salt and pepper and remove into a bowl. Then, in a pan over medium heat, splash the oil and add the eggs. Then place the mushrooms in the middle of the egg mixture add the gruyere cheese, cook for a few minutes and with control fold it in half, using a spatula.
