
Calamari or squid can come in many different shapes, and the interesting thing about cooking calamari is you either cook them for a very short time in high heat (3 minutes top) or cook them at medium-low heat for over 30 minutes Any time in between will end up with rubbery squid. Good thing to keep in mind
Since my squid is fresh I chose to use a small squid and it cook it slowly in medium low heat for about 40 minute total cooking time. Ending with soft, tender calamaris, full of flavor.
This recipe uses Veggie broth, but this can easily be replaced by ½ veggie broth ½ white wine. If going for a much aromatic type of flavor by adding the wine you can also add parsley is you wish to bring some french notes into the recipe. Both ways are delicious.

In a medium frying pan heat the olive oil and butter, place the squid evenly throughout the pan.
Add garlic, onion, celery, garlic powder and salt and stir together, cook for about 10 minutes.
Pour the veggie broth and stir, cover the pan and cook in medium low for about 20-25 minutes stirring occasionally, until the calamari are juicy and tender.
Serve with rice and veggies.
